Carrot Bread

Sift together several times:
3 C flour
2 C sugar
2 t soda
1 t cinnamon
1/2 t salt

Mix together:
2 C grated carrots
1.5 C Wesson oil
1 sm. can crushed pineapple with juice
2 T grated orange rind
3 eggs
2 t vanilla
1.5 C nuts

Mix sifted ingredients with carrot mixture with electric mixer.

Divide into two standard loaf pans.

Bake 1 hour at 350º
